Easy Pancakes… and a little secret, they’re vegan too!

I’ve gone through many phases of my “eating” life.  I’ve been vegan, vegetarian, and pescatarian, etc.  But in all “eating” phases I could eat this simple pancake recipe.  The best part (besides how good they taste) is that most people have these ingredients in their pantry regularly so you can have a delicious breakfast whenever it sounds good!  

I originally found this “Vegan Pancakes” recipe on AllRecipes.com over a year ago, and recently re-visited it to read some reviews.  It has over 550 reviews and is rated 4.5/5 stars… I’m not the only one who loves it!  By the way, The original post contains a video if you’d like to watch the step by step process.

Ingredients:

1 ¼ cups all-purpose flour

2 tablespoons white sugar

2 teaspoons baking powder

½ teaspoon salt

1 ¼ cups water

1 tablespoon oil

I also like to add about a tablespoon of extract… typically I use vanilla but I’ve also added lemon and almond as well.  Fresh berries in the batter and poppy seeds are also fun twists.

As you can see by the very short ingredients list (well… and the name of the recipe), these pancakes are VEGAN which is completely awesome especially because they taste just as good as any non-vegan pancakes I’ve had.  While I do eat meat and other animal byproducts, whenever I can make a delicious vegan dish, I’m happy to do so.  

Just mix the ingredients all together, turn on the griddle to medium heat, add a little bit of oil or butter to the griddle (I prefer using coconut oil), put about a ¼ cup of batter in the pan (I like to make smaller pancakes so they’re easier to flip), wait until you see bubbles forming after about 1 minute, then flip pancakes and let cook for an additional 45 seconds to a minute.  Voila! Serve with fruit, powdered sugar, jam, peanut butter, maple syrup, or your favorite topping. Bon appétit!
